    Chilled Watercress + Spinach Soup

    Serves 4
    2tbs (30ml) olive oil
    1 sweet onion, peeled and minced
    1 small potato, about 5oz (150g), peeled and diced
    10oz(300g) watercress, washed and thicker stalks removed
    2 3/4 – 3 1/2 oz (75-100g)baby spinach leaves, plus a handful to garnish
    3 1/3 cups (800 ml) vegetable or chicken stock (see pg 249)
    sea salt and black pepper
    squeeze of lemon juice
    3-4 tbsp. (45-60ml) creme fraiche, to serve
    (optional)

    Directions
    Heat the olive oil in a large pan and add the onion and potato. Saute gently stirring frequently, for about 10 minutes until the vegetables are soft but not brown.
    Add the watercress and spinach, then pour in enough stock to cover the vegetables Bring to a boil and season to taste with salt, pepper, and a squeeze of lemon juice. As soon as the watercress have wilted, remove the pan from the heat.
    Puree the soup in two batches using a blender.
    Pour into a wide bowl and let cool completely. cover with plastic wrap and chill for a few hours overnight.

    To serve, pour the soup into chilled bowls and garnish with a few baby spinach leaves. Add a small spoonful crème fraiche if you wish. and grind over some pepper.

    Dear Diary,

      My life is one great mystery. Hopefully someone that crosses my path with help me chnage that. I’m well, or so I thought, medications is just superfluous.
      Here I am…Shotgun, my father behind the wheel of a dark blue sienna. At an average speed we continue to curve thru the highway, halfway to our destination. Finally. Music that makes me sing. These years its been hard to find a meaningful composer of true music. The 21st century-a mere repetition of words-fast and simplistic tempo. Lyrics just seem so superficial and materialistic.Warm, like a summers day. Bright rays of light shine thru the window envelope my shoulder and lap. 
      My mood reflects confidence and pride, due to my wardrobe. A deep red embroidered  sleeveless dress, paired with a dark blue legging, and a black/red button up cardigan.
      “What a horrible driver-S***!” Dad remarked.
      As always, on our way to flushing, we encounter drivers that are indecisive, inconsiderate and inpatient. Road rage, all over again. What a lack of good drivers, you find in New York. Our destination was a restaurant by College Point. I’m STARVING…This will be interesting.

    How DO you feel?

    The end of classes:
    Seems as though I have extra time on my hands. Not only this, but I begin to already question the daily grind of the day. Its like not having a ‘schedule’, without one I go haywire. The primary goal of an going to a schooling institution felt like- improving myself. “GOT TA GET THAT EDUCATION…”
    In addition, school helped me gain a social status of popularity. 
    I think my friends and teachers for always helping me out. The in-and-out of conversations with them and working toward solutions-changed my perspective as an individual
